Sweet Sticky Yam and Carrot Casserole


1 large yam
3 large heirloom carrots
1 medium white onion
1 fennel bulb
1 cup peeled and cored apple
2 tsp Missing Link Spice Rub
1 cup Sweet Sticky Icky BBQ Sauce
1 tbsp fresh ginger
Salt and pepper to taste
20g fresh dill


1. Preheat oven to 375°F.

2. Peel and medium dice vegetables and combine all ingredients except fresh dill in a large mixing bowl.

3. Move mixture to a parchment paper-lined roasting pan and bake for 45 minutes or until vegetables are cooked through.

4. Garnish with fresh dill and serve.
