Sweet Sticky Yam and Carrot Casserole

1 large Yam
3 Large Heirloom Carrots
1 Medium Onion
1 Fennel Bulb
1 cup Peeled and cored Apple
3 tsp. Missing Link Spice Rub
1 cup Sweet Sticky Icky BBQ Sauce
1 Tsp. fresh Ginger
Salt and Pepper to Taste
20g fresh Dill


Peel and Medium Dice all vegetables and add all ingredients (except the fresh Dill) in a large mixing bowl. Place the mixture onto a roasting pan (line with parchment paper) and place in a preheated 375 degree oven for 45 minutes or until vegetables are cooked through. Transfer to Serving dish and sprinkle Fresh Dill over the dish and serve.
